Yemen's coffee, with its fruity notes, is one of our special and exclusive products. At the beginning of each year, Uncle Ghaleb shares many stories about his region and the farm where his coffee trees grow high in the mountains of the Haraz region, at an altitude of 1800-2200 meters above sea level. The farmers in this area share the finest coffee varieties, including the original Typica strain, a branch of the non-genetically modified Arabica variety. What distinguishes the crops of this region is the sweetness of the coffee beans and their reliance on rainwater for irrigation. We began collaborating with Uncle Ghaleb on this year's harvest (2020) to develop a special processing method to bring out the best notes in the coffee beans. Following this initial collaboration, Uncle Ghaleb expressed his willingness to establish a lasting partnership and further develop this processing method. The processing method relies on controlled fermentation at moderate temperatures to ensure a higher sugar content in the coffee beans and enhance the fruity notes of the coffee after roasting. Arabs define "Ghalla" as the harvest a farmer reaps from the land. At Camel Step, in collaboration with Dhud, we define "Ghalla" as our special coffee crop, where the coffee cherries have been processed using a unique and exclusive method by Camel Step. Thus, the idea for the "Ghalla" project was born, focusing on premium and specially processed coffee beans to elevate the quality of green coffee. In the "Ghalla" story, coffee beans undergo the highest levels of care and quality, from irrigation and harvesting to processing and storage, before being transported, roasted, and finally prepared and enjoyed. Through frequent visits to coffee farms and numerous trials conducted with farmers over the past years, we are taking confident steps to implement "Ghalla" projects to develop coffee crops and improve their quality. Our direct relationships with farmers aim to ensure the continuity of premium crops, raise quality standards, and support farmers. Our first step in the "Ghalla" projects is to introduce the coffee bean processing method, developed by the "Ghalla" team in collaboration with Zoud, and then share this method with the farmers. This is followed by follow-up with farmers and processing stations to ensure that all steps are followed and documented. Finally, the coffee is tasted to confirm its quality and evaluate it. The "Ghalla" projects are not limited to a single farm or country. Rather, they are implemented with several farmers who have the potential for development and sustainability, on a regular basis, to provide everything unique to our partners and add a competitive edge. Through this, we work to develop the coffee industry market in the region.
