In the fertile Huila Mountains of southwestern Colombia, you'll find the Chaluses Coffee Farm. Chalus Fernandez is a fifth-generation coffee grower whose family has been cultivating coffee for over 110 years in the Baicol region. Since taking over the farm from his grandfather in 2010, Chaluses and his brothers have maintained their traditions while forging their own path as a third wave of specialty coffee producers. In addition to cultivating exceptional coffee, Chaluses and his family are leaders in their community, setting an example in environmental conservation and providing employment and education opportunities. Chalus coffee is always present on the tables. On his farm, a variety of Arabica and Castillo coffees are grown as a result of the gradual and continuous application of organic farming. The Castillo variety is environmentally friendly and has a high yield, and it results from the crossbreeding of Caturra and Timor coffee varieties. Castillo has qualitative advantages such as the density and large size of the beans, and it is also resistant to insects and diseases such as Roya rust and green coffee seed disease. The coffee plants grow between 1450 and 1600 meters above sea level alongside orange, mandarin, lemon, and banana trees, as well as sugarcane and tropical fruits such as mango, pineapple, and guama, a fruit native to South America. This altitude and natural vegetation create the ideal environment for growing coffee with a unique flavor and sweetness.
